Cooler days, comfort food and vegan friendly, gluten free bread and more

After a few blissfully cool days, I'm back :) I know I haven't made an appearance since the day before our power was cut for several hours, but may I say- the day remained gloriously cool and no food spoiled. The power came on after four and a quarter hours, not the whole five predicted. Relief all round.

As always, I shall begin with some snap shots...


A beautiful sunset taken from my upstairs bedroom window a few days ago. I had to crop it to remove the screen blur, but what a gorgeous sight :)


A rare capture- my regular morning visitor. I say rare, as with a phone, this little guy isn't easy to snap. 


The past few days have given the most golden sunrises, like above. 

I have been experimenting with different things lately. One random experiment was making lamb mince meatballs with my natural fibre as a binder. I also added some dried rosemary, salt and pepper, and rolled them into balls. See below.


These balls were placed on a rack sitting in a baking tray before grilling. This allowed for some of the fat to drip away.


The result: tasty, high fibre lamb meatballs perfect for lunches or snacks. I am a bit of a carnivore sometimes :)

With cooler weather has meant comfort meals. A family favorite is the good old cottage pie. It's fool proof really, and has protein and veg all in one dish :)


Cottage pie is the easiest family dish. To the mince, I add about a third the amount of chopped veg. Then I season it and also add gravy powder and some water after the meat and veg has cooked.
To mash the potatoes, I add butter, cream (or milk) and  use the stick blender to make it smooth. After I have placed the potato on top, I add some grated parmesan for flavour before popping it in the oven for 30mins.


Had to add this- a perfect scene- golden morning sun and a fairy wren hen on the fence. I am so grateful for this view, and these birds.

And now, onto my vegan friendly, gluten free bread. This recipe was one my non teen recommended. I'm so glad she did. I made it today and it turned out, and tasted so good. As it's my first time using quinoa, i'm even more chuffed it worked. The recipe was originally from here

Vegan Friendly, Gluten Free Bread
Makes 12-15 slices

Ingredients:
300gms whole, uncooked quinoa, soaked at least overnight 
60gms chia seed
250mls water- 1/2 to soak the chia seeds and half for the food processor
60mls olive oil
1/2 teaspoon bi-carb
1/2 teaspoon salt
juice from half a lemon

Method:
Pre-heat oven to 160 degrees Celsius.
Oil and line a loaf tin with baking paper.
After soaking chia seeds and quinoa, at least overnight, or for 2 days like I did,  drain quinoa well, and add it, and chia gel into a processor with the remaining ingredients. I added a little less than the 125mls of water due to the fact my quinoa was a little wet still. 
The original recipe states to process for 3 minutes. As I did this at 7:30am, I did it for only 1.5, without affecting the result.
I baked mine for 1 hr 20 minutes, not the full 1 hr 30 the recipe stated.
I let it cool slightly, turned it out, peeled the paper off and sliced it carefully after 30mins. I got 15 slices, but the crusts were thin, so i would say 14 to be fair. It was delish. The rest is frozen individually.

Remember our garden make over? Well, it hit a bit of a road block. Hubby and I aren't friends with the weather bureau of late. The last bit of paver laying and concreting saw three days of torrential rain hit. Needless to say, that completely ruined work done. Today, hubby checked the weather and decided it was safe to trust them. Hmmm.


After I removed the pavers and useless cement, which was surprisingly easy as the concrete had disintegrated in the rain, hubby relaid the pavers on top of new coarse sand, and re-cemented around the whole lot.

Then the rain came :(
I used our BBQ cover, then hubby put the tarp on top, and then the baby pool, to try and protect the still unset concrete from losing round number two to the open heavens. 
One day, we will have this job done!

Lastly, let me show you tonight's dinner. Our newest teen seems to prefer healthier meals. I am trying to incorporate everyone's taste here, so this was my compromise...

Very Veggie Rolls

Ingredients:
serves 4-6.

100gms of dry coleslaw mix
1 small potato, grated
1 small sweet potato, grated
1/2 red onion, thinly sliced
1/2 cup grated cheese
1/4 cup bread crumbs
1 egg
1 rasher bacon, chopped
3 sheets puff pastry
seasoning: salt/pepper/sweet paprika/ 1 tsp massel veggie stock powder, 1/2 tsn curry powder
1 tbsp each butter and olive oil 

Method:

Pre-heat oven to 200 degrees.
On medium/low heat, saute dry coleslaw mix, potatoes, bacon and onion in olive oil/butter. 
Add seasoning, continue cooking on low heat til all veggies are soft.
Allow to cool slightly.
Place in a bowl. Add cheese, bread crumbs and egg. Mix well.
Place equal amounts of the mix in the middle of the  defrosted pastry sheets.
Roll up like a sausage roll.
Place onto a well greased baking tray.
Seal ends with a fork.
Bake for 35 mins, or until lightly golden.

And the result- this is hubby's serve. the teens felt satisfied with half each.

I confess, I haven't tried these. The general consensus was too much veg but they ate every last bite. I will tweek these the next time I make them, but pretty happy with this result :)

Cheats quiche


How could I be anything but grateful for this sunrise? After 8hrs straight sleep- 8hrs with no dummy replacement cries, no 'cuddle me' cries- I woke thinking it was 2 or 3am, only to discover it was 5:30. Bliss! After bubby fed, I came downstairs to capture this glorious sunrise. 

I love how each day starts differently. You never get the exact same sunrise- ever. Similar, but not the same. Kind of gives me hope- each day offers something new :)


A few days ago, my daughter asked a favour of us, so hubby and I learnt some 'flower arranging for dummies'. This stunning bunch was the result. I certainly have a new appreciation for florists, but thanks to Google, I was able to give it a go myself. Then hubby fixed my effort. Glad he did :) 
Still, I chose the flowers. I think I chose well. 

This is fast becoming a very busy week. My sweet bubby has been doing an eating, sleeping, eating some more pattern today, and is already asleep again. I think I may join her. Fatigue hit me like a truck today. I even succumbed to -wait for it-eating sugar!!!!! But guess what- it didn't help :( Oh, so much temptation with German students both sending, and giving us chocolates! Thankfully, it's nearly all gone.

I think just being so active all day and getting not quite a full nights sleep every night for a while takes its toll. I took my newest teen for a walk to the school today to both show her the way, and allow her to purchase a high school uniform. I was exhausted before we went, and the 40min walk there and back in the humidity put me to sleep just after lunch for just under an hour. 

Tomorrow, it's enrollment day for my German teen, then hubby, bubby and I are out until the power comes back on. Yep, our power is off for 5 hours tomorrow. I know, things need repairing and replacing, but in the middle of the hottest time of the year...! Never mind, we will eat out, and I will just prepare boiled bottles of water and keep some hot water in the thermos tomorrow to heat them up. And eat a megga cheesy omelette for breaky in the morning. I just can't throw away cheese!

 Speaking of things such as cheese, let me show you our dinner tonight...

Cheats Quiche


Ingredients:
serves 6

1 sheet puff pastry
1 zucchini, roughly chopped
1/2 medium red capsicum, roughly chopped
1/2 red onion, roughly chopped, 
6 short cut rashers bacon, chopped
4 eggs
2/3 cup grated cheese
2/3 cup cream
herbs & seasoning
1/4 teaspoon P flour
small knob butter

Method: 

Pre-heat oven to 200 degrees.
Lightly oil a quiche flan and lay 1 sheet of defrosted puff pastry evenly inside. Fold corners down.

On medium heat, lightly fry butter and veggies/herbs and bacon until softened.
Add seasoning, cook through for a minute more. Spoon veg/bacon mix over the pastry. cover with grated cheese.
In a bowl, whisk eggs, flour and cream. 
Pour over the veggies. 
Gently stir through to mix.
Bake for 40 mins or until lightly golden.
Serve hot or cold. 
Makes great lunches too :)

Dinner went well tonight with leftover beetroot salad, lettuce leaves, and potato salad with guacamole. The quiche re-heats well and tastes great hot or cold.

Tomorrow will be rather big. Thursday may be a trip to Brisbane for hubby's uni, and possibly a trip to see my dear dad. Friday will be finally getting rid of the garden dirt- if I can, and allowing for us to actually use the backyard. Well, after working out how to banish bitey green ants that is-they are everywhere.

Our first monthly picnic starts again this Sunday. Its important to keep momentum going. Seeing people gather for a feed and socialise is rewarding for hubby and myself.

Easy low carb protein balls, Australia Day and a big change of plans


I'm back, with the stunning scenery intro :)
Look at this amazing sunrise, taken two mornings ago. After torrential rain- seeing the sun was so good, especially as it was the day we were picking up our newest, travel weary teen.


This evening sky scene was taken last night, after quite possibly the most unpleasantly hot day ever. Our newest teen was a little shocked just how hot it can get.
Oh the humidity. 
We needed to take our sweet bubby for a walk by the creek until the sun went down, in the hope that it wouldn't still be beating down on her bedroom window, heating the room like an oven. It made little difference, and she took hours to go to sleep. On a plus- stormy skies are by far some of the prettiest. And stormy skies do bring cool changes with them :)

Happy Australia Day! 

I have never been too keen on celebrating Australia Day before for many reasons, until someone made it special for me. Two years ago today, my amazing hubby took me for a shark scuba dive at Seaworld on quite possibly the most miserably wet and rainy days. After the dive, when I was even more drippy, snotty and was sporting wet patches on my dry clothes from my swimmers, he dropped to his knee, said the most beautiful words and flashed a ring. I was a sniveling mess, but managed to say 'YES!' Then I cried/laughed/cried some more :)

Slowly, but surely, this man, who I am blessed to call my hubby, is replacing sad memories for joyous ones. 

That leads nicely into my first big change. I have contacted my University to discuss deferring for yet another year. If that isn't permitted, I shall withdraw. I can't explain what is going on inside me, but my peace for doing uni now just left. Exited. Vacated the building. I questioned myself. This is, after all, my year of doing what scares me, right?  It is. I can't ignore the prompting on my heart. You know that feeling- the voice offering wise advice that leaves us feeling peace that we often discredit. Instead of ignoring this voice, I am listening. And I already know that there are BIG things I am scared of doing that uni pales to. I can study. I can follow a formula. I am reasonably bright. But finishing things that I have procrastinated on for so long- that is frightening. What if I fail, what if I make mistakes, what if...And what if I succeed, lose that feeling weighing me down the longer I put things off. I can't do that any longer.

And then, there is my hubby, and my bubby, and my teens and non teen too. I have been supported through a very painful, difficult pregnancy, and through the first few months of motherhood when my hormones went crazy, and my body tried to deal with surgery pain and injuries. Now, it's my turn to be the support. Hubby is embarking on a big year- travelling to Brisbane to attend uni. My sweet bubby needs me too. I am not willing to put that pressure to study on top of their needs. Not at this stage.

And, I am not willing to shrink back and not finish my hearts passions either. But those, I can do at home while being an available support.

This gives me immense peace. It is the right, and best, decision for now. I am genuinely excited for the things this year will bring!

After all of that, let's get cooking! 

Easy Low Carb Protein Balls

Ingredients:
makes around 16 balls
or 8 serves

1/2 cup sugar/salt free peanut butter
1/2 cup cottage cheese
splash of vanila extract
1/4 cup gentle fibre
2 scoops plain protein powder
1 heaped teaspoon cinnamon

Method:
Place all the ingredients into a food processor and blend until it resembles crumbs.
Using a teaspoon, scoop up and press/ roll into bite sized balls.
Store in the fridge.
2 balls per serving.

These are NOT sweet. 
I am really trying to keep my sweet tooth under control.
Cinnamon does help sweeten a little, and if you really wanted, you could add a sweetener of choice, but I am trying to appreciate the simple flavour of foods to re-educate my taste buds. 
I LOVE caramel, but if I'm that desperate- a simple treat of dates topped with a spoon of peanut butter is to die for delish.

Onto the ingredients. Another big change- I have had to eat humble pie and admit that, for me, I am eating too much fat. Things aren't working well. The moment I cut fat down and add a different fibre for bulk (like the Gentle Fibre: oat bran, pysllium husks and linseeds), and eating low fat yoghurt- the body is responding much better. 
I am not not eating fat! I just know that I need to cut it right down. These protein balls do have peanut butter, but no coconut oil. I am still having full cream milk, but half milk, half water for my daily portion. 
Hubby is still working out, and his research has revealed that no one way of eating works for every person/ body type. He can eat, and does need, a higher carb load than me. I know that certain foods just don't work. I don't want to compromise on whole food, but if I am happier inside, then that will reflect outwardly. As long as it's still as natural as possible, then it's a win/win.

Now, onto my Veggie Full Spag Bol from my last post.

Very Veggie Spag Bol
Serves 6-8

Ingredients:
2 zucchinis
2 carrots
3-4 sticks celery
1 red onion
fresh herbs of choice
450gms regular mince
1 jar Italian passata
a splash of balsamic vinegar and worcestershire sauce (yes- sugar laden but not much is used)
1 teaspoon of  salt, pepper, paprika and Massel veggie stock powder
a knob of butter

Method:

In a food processor, finely grate, or pulverise all the veggies and herbs together.
Set aside.
In a large pot on medium heat, brown mince. Add veggies to same pan and cook down with the mince. Add the butter, stir, then add the salt, pepper, paprika and stock powder. 
Stir through the mince/veg mix until it darkens a little more. Add passata and a little extra water.
Turn heat down,  simmer for a minimum of one hour, stirring regularly. Add more water if mix gets too dry. Cover after an hour and simmer for another 30 minutes. Turn off the heat.
Cook spaghetti.



This is the meat to veg ratio. This is regular, full of fat beef mince


The sauce cooks down well and intensifies in flavour. By browning the meat and veg, you add extra flavour and sweetness to the dish.



Not a glamorous meal, but a perfect weekend one as it was used for leftovers the next night. My teen wasn't fussed on the extra veg, but she ate it. personally, I loved it! And i will make it again. I had my serve on steamed, shredded cabbage.

Let's talk about dinner now. In my last post, I gave the recipe for my Aussie Burger Patties. Well, this is what I turned them into... 


The damper was the hamburger bun, and the cooked patty is hiding under my salad. It was a do-it-yourself burger night. 
I grated one whole beetroot, added 1 heaped teaspoon of whole egg mayo and some brown vinegar and stirred it through. So good! There was a simple garden salad, a guacamole made with 1 avocado, lemon juice, salt, pepper, a quarter of a finely chopped red onion and sour cream, plus pineapple rings.
The patties were simply grilled to cook, minimizing fat. 
It was a very filling dinner. I admit to only getting through a corner of the damper though. My stomach has shrunk- yay!

Coconut bread, cheesy stuffed mushrooms, veggie full spaghetti bolognaise and more

On rainy days, get baking! How could I waste this glorious, cool wet weather by doing anything but? I did contemplate sleeping to make up for the lack of last night, but a sweet bubby had other plans. I  also contemplated taking a photo of the wet weather to keep the stunning scenery trend going. It has been just a little too wet. Hubby is currently carefully peeling his soaked through uni mail apart and placing it on a table cloth to help dry them out. With a student coming tomorrow, I am a little disappointed it's raining for her sake. However, it will allow her to rest up after one epic bit of travelling to get here. She will have plenty of time to experience this awesome country when the suns out :)

Let me show you what my day of food looked like. It is in no particular order. It's that kind of day :) Enjoy! 

Cheesy Stuffed Mushrooms
Serves 2
Ingredients:
2 large field mushrooms, stalks removed
1/2 red onion, chopped
1/2 cup cottage cheese
1 egg
2 cherry tomatoes, chopped 
1 slice of ham
1 egg
small knob butter
splash olive oil
fresh parsley
small amount of shaved parmesan
pepper

Method:
In a pan on medium heat, add butter and olive oil. 
When butter starts sizzling, add mushrooms, bottom up, and onion.
turn heat down and cook until onions start to become transparent. 
Remove mushrooms. The underside should be golden brown.


It's important to brown the top of the mushrooms as this adds flavour, but also helps them cook through during the grilling process later.


Mix together cottage cheese, egg, tomatoes, cooked onion, ham, parsley and pepper.
Spoon equal amounts into each mushroom.
Top with enough shaved parmesan to cover the top.
Grill until golden.


The result is delish and filling. It could easily be made into a vegetarian meal by omitting the ham. 

Aussie Burger Patties
(These are for our Australia Day family dinner night on Monday)
Makes 10


Ingredients:
750gms regular beef mince
3/4 cup breadcrumbs
1 egg
1/2 cup grated cheddar
sweet paprika
salt and pepper
1 teaspoon Massell veggie stock powder

Method:
Wash hands. Place all the ingredients in a bowl. Remove rings. Mix with your hands until all combined.


Now, this is one piece of Tupperware I find brilliant for making hamburger patties. You simply put in the required amount, push the handle down, twist and it's done. The patties can then be individually stored in the white stackable containers too. Clever. 


This is the result- 10 cheesy beef patties ready for an Aussie Day burger treat.  
Next, we have an experiment that I didn't mind at all. I found the recipe on this one particular website and adjusted it only slightly. You have to scroll past the seafood and linguine to find the bread though. 

Coconut Bread
Makes 10-12 slices


1/2 cup coconut flour
1/2 teaspoon salt
1/4 teaspoon bi-carb
6 eggs
1/3 cup coconut oil
1 teaspoon apple cider vinegar

Method:
Preheat oven to 180 degrees celcius.
Mix dry ingredients in a bowl (I never sift).
Add wet ingredients all together and mix very well. I used an egg whisk.
Put batter into a well greased and lined loaf tin.
bake for 50 minutes, or until loaf turns golden on top and is firm to touch. 
Allow to cool before removing.


It doesn't rise much, but it's such a dry, dense bread, you don't need much.

And lastly, the start of my very veggie bolognaise. I must admit, by the time I got to making this, I liked hubby's suggestion: make it tomorrow when we have a new teen in the house. So I did the messy part this afternoon.


This is how much veg goes into my very veggie bolognaise: 2 zucchini's, 2 carrots, several stalks of celery, a red onion and freshly picked herbs- parsley and thyme in this case. For those readers who know why, no garlic, but please add it for me! 


All of the above veggies are then thrown into my fabulous food processor and pulverised into a veggie pulp of sorts. It cooks faster than grated, and grating takes forever anyway.

You will have to wait until next week for the results of the bolognaise, and Aussie beef burgers. I promise, it will be worth it, as I will have so much more news to share by then :)

Banana bread; easy chicken; a garden problem solved; stunning scenery


Too much happened today to not post again! I feel like I have done a megga boot camp workout, yet in reality, I was contained to my garden for a large part of my morning. Before I get into my day, look at this stunning scenery! Our evening walk last night was worth it for this. I'm glad I asked hubby to make it to the bridge- what a sight. 


Even the incoming tide looked stunning in the evening light. I love the patterning in the sand.


I love the contrast and detail in monochromatic pictures. I also love this part of the creek. It has special memories for me.

Before getting into how the garden problem was solved, let me first show you my healthy lunch- steamed chicken and cottage cheese salad. 


I cooked 1 small chicken breast in a hint of olive oil to sear each side for 2 minutes, added a little boiling water, covered it and turned the heat down low, essentially letting it  steam to cook- approximately 7-8 minutes.
While this was happening, I prepared a layered salad: dry coleslaw mix on the bottom, topped with chopped red onion and red capsicum. 
When the chicken cooled, I sliced the chicken, layered it around my salad base, put a heaped spoon of cottage cheese in the middle, added 2mls of olive oil, a splash of brown vinegar and pepper. So healthy and fresh.

Feel privileged, dear readers, for you are about to see me in my fabulous pink PJ's, thanks to my non teen who helped me garden this morning. I'm in all my natural glory. Old me wouldn't have allowed a photo, let alone post it, unless I was picture perfect. I like this me better- way less uptight. Sometimes anyway :)

I was stressing about how on earth I was going to get rid of a huge volume of dirt piled high on my garden and make it tidy before my newest teen arrives in less than 2 days. This morning, my non teen came over to do her usual Thursday bubby sister sitting. We had also planned an exercise routine starting today too. I suggested she go for a garden workout with me. It was overcast anyway, and gardening is actually quite a workout at times.

What resulted was an effective team effort. One side of the mile high dirt pile was quickly removed- me squatting and digging with a trowel, my non teen holding the Aldi bags open as I shoveled sandy dirt in before she lifted them away. Who'd have thought those 12 zillion Aldi bags we never remember to take shopping would actually come in handy :)

I was surprised at how quickly the work got done. It was painful, but it was fun too. My non teen loathes gardening, so that made it an extra special time. Her respect for me is something I treasure.

My non teen carried some bags to the bin- something I currently don't have the strength to do. A pile broke outside the gate- it is now raked out ready for grass re-seeding. Several bags are now full, tied up and out of the rain, ready for disposal too. But with no mess everywhere, i am tangibly far more relaxed. 


Due to my non teen hating 'nature', I ended up braving the other side too- and I have insect bites galore. Worth it for the progress we made. Why I like this picture, other than my fabulous pink jammies, is that i have proof that i can kneel again. The knee nearest the camera has been the painful one. Just after this, I did request the kneeling pad as the pain was getting too much. Considering I could barely walk on it a few months back- I'm over the moon.


What happens when children find your phone :) My beautiful non teen being her gorgeous self. Love my fabulous dish washing gloves! I find they make the best gardening gloves out :)


My industrious one, wearing her gym clothes to garden. She shoveled and raked and lifted for me today. Honestly couldn't have done it without her help. And this is the view outside our new gate- green space. Sigh. It's all just so worth it :)


This Kookaburra hung around our garden a fair bit this afternoon. I have no doubt the fact that we unearthed frogs, lizards and many insects has attracted his attention. 

Today I also decided to experiment with a no processed sugar banana bread recipe. Bananas are sweet and high in natural fructose- or fruit sugar. Flour converts to sugars in the blood stream. Why on earth add more?! It no longer makes sense to me. Look below for my version...

 Banana Bread
Refined sugar free.


Ingredients:
3 frozen bananas, defrosted
1/2 cup chopped dates, soaked in enough warm water to cover
1/3 cup melted butter
1 egg
vanilla extract or 1 bean, insides scraped
1 teaspoon bi-carb
pinch of salt
1/2 cup coconut flour
1 cup unbleached SR flour
teaspoon cinnamon
pinch nutmeg 

Method:
Pre heat oven to 180 degrees celcius.
In a bowl, mix bananas and melted butter together with a spatula or wooden spoon.
Add egg, vanilla, soaked dates- with liquid, mix.
Add bi-carb and salt, mix again.
Add flours, fold mixture together- don't over mix.


This time, I didn't use a loaf tin but a baking tray. I lightly spray oiled the tin, lined it with baking paper and smoothed the batter in, gently pushing to the edges. Bake for approximately 35-40 minutes if in a flat tin, or up to an hour if in a loaf tin. 


The cake felt a little soft in the middle after 35 minutes, so I covered the top with foil and turned the oven down to 150 and cooked the batter a further 10 minutes.
I allowed it to cool for 5 minutes before carefully lifting it from the pan.


This recipe made 12 slices. It was a total hit and I am definitely making it again for treats :) It can be frozen until needed.

Lastly, another chicken dish to end on- tonight's dinner.

Hot Chicken Wraps
Serves 4.



Ingredients:
4 tortilla wraps
2 small chicken breasts
1 small avocado
1 tomato
hummus
seasoning of choice
1/2 cup passata tomato sauce
1/4 cup mexican taco sauce
1/2 cup grated cheese

Method:
Slice chicken breast into long pieces. Fry over medium heat in a little oil until just cooked. Add seasoning, passata and taco sauce. Simmer for 5 minutes on reduced heat.
Place chicken with a little sauce in middle of tortillas.
Add cheese, hummus and then grill til cheese melts.
quickly add a quarter a sliced avocado per person, sliced tomato and serve.
I must say, i didn't eat this, but it looked so good!
