How could I be anything but grateful for this sunrise? After 8hrs straight sleep- 8hrs with no dummy replacement cries, no 'cuddle me' cries- I woke thinking it was 2 or 3am, only to discover it was 5:30. Bliss! After bubby fed, I came downstairs to capture this glorious sunrise.
I love how each day starts differently. You never get the exact same sunrise- ever. Similar, but not the same. Kind of gives me hope- each day offers something new :)
A few days ago, my daughter asked a favour of us, so hubby and I learnt some 'flower arranging for dummies'. This stunning bunch was the result. I certainly have a new appreciation for florists, but thanks to Google, I was able to give it a go myself. Then hubby fixed my effort. Glad he did :)
Still, I chose the flowers. I think I chose well.
This is fast becoming a very busy week. My sweet bubby has been doing an eating, sleeping, eating some more pattern today, and is already asleep again. I think I may join her. Fatigue hit me like a truck today. I even succumbed to -wait for it-eating sugar!!!!! But guess what- it didn't help :( Oh, so much temptation with German students both sending, and giving us chocolates! Thankfully, it's nearly all gone.
I think just being so active all day and getting not quite a full nights sleep every night for a while takes its toll. I took my newest teen for a walk to the school today to both show her the way, and allow her to purchase a high school uniform. I was exhausted before we went, and the 40min walk there and back in the humidity put me to sleep just after lunch for just under an hour.
Tomorrow, it's enrollment day for my German teen, then hubby, bubby and I are out until the power comes back on. Yep, our power is off for 5 hours tomorrow. I know, things need repairing and replacing, but in the middle of the hottest time of the year...! Never mind, we will eat out, and I will just prepare boiled bottles of water and keep some hot water in the thermos tomorrow to heat them up. And eat a megga cheesy omelette for breaky in the morning. I just can't throw away cheese!
Speaking of things such as cheese, let me show you our dinner tonight...
Cheats Quiche
Ingredients:
serves 6
1 sheet puff pastry
1 zucchini, roughly chopped
1/2 medium red capsicum, roughly chopped
1/2 red onion, roughly chopped,
6 short cut rashers bacon, chopped
4 eggs
2/3 cup grated cheese
2/3 cup cream
herbs & seasoning
1/4 teaspoon P flour
small knob butter
Method:
Pre-heat oven to 200 degrees.
Lightly oil a quiche flan and lay 1 sheet of defrosted puff pastry evenly inside. Fold corners down.
On medium heat, lightly fry butter and veggies/herbs and bacon until softened.
Add seasoning, cook through for a minute more. Spoon veg/bacon mix over the pastry. cover with grated cheese.
In a bowl, whisk eggs, flour and cream.
Pour over the veggies.
Gently stir through to mix.
Bake for 40 mins or until lightly golden.
Serve hot or cold.
Makes great lunches too :)

Dinner went well tonight with leftover beetroot salad, lettuce leaves, and potato salad with guacamole. The quiche re-heats well and tastes great hot or cold.
Tomorrow will be rather big. Thursday may be a trip to Brisbane for hubby's uni, and possibly a trip to see my dear dad. Friday will be finally getting rid of the garden dirt- if I can, and allowing for us to actually use the backyard. Well, after working out how to banish bitey green ants that is-they are everywhere.
Our first monthly picnic starts again this Sunday. Its important to keep momentum going. Seeing people gather for a feed and socialise is rewarding for hubby and myself.
