And MRI and some curry please

The days are so full, they pass in a blur. I am sleeping well, just not long enough. I will make this post as brief as possible, 'cause I'm ready for some shut eye already.

I ate well today. Good me. Look below to see what I began the day with...


After my sweet hubby bought me up a steamy cuppa at some early hour when bub woke, I finally managed some 2 hours later to get breaky in: paleo bread, topped with 1/4 of an avocado and a generous dollop of beetroot dip, then a drizzling of olive oil. Doing this again!

I had an interesting day. Bubby just wants cuddles. Her little nose is chockers with boogies and a snot farm, so I can understand why she is a lot clingier than usual. That made getting anything done rather special. I finally managed to get things sorted and get myself to the Tweed Hospital for my MRI. My teen came to help out- very grateful about that.

Not ever having experienced an MRI before, I had zero idea of what to expect. Thankfully, the Tweed Hospital staff are honestly superb, and made today a great experience. It was loud and restrictive, and my knee hurt a little in the position it was in, but in 15 minutes, I was done, with minimal waiting beforehand. I was home within an hour. Now, we play the waiting game. Parking opposite the hospital, my teen pointed something out, and I was surprised to see these Bush Stone-Curlews so near the cars. They are masters of camouflage considering how big they are- I honestly didn't notice them and they were only a meter away.


I love rare animal finds- in places you least expect to see them. I love birds, so it was a treat to see this one before my MRI...

I really tried to eat well today. After breaky, I didn't eat until lunch. Once back from the hospital, I ate the below...


These nuts were a cheap score at Woolies. They have an itty bit of sugar in them, but per 100gms, it's no big deal, so I grabbed them. Very nice, with a great after kick :)

I wasn't sure what I had planned to do with the chicken until I checked the pantry. When I saw a tin of coconut cream, I instantly craved curry :)


We have 4 very healthy appetites, so I cut up a large, double chicken breast.



Then I fried it, in batches, in coconut oil.


Then I chopped up red capsicum, carrots and broccoli.



I returned both portions of chicken to the pan, added a tablespoon of my curry powder which I pimped with sweet paprika, salt, chilli flakes and some fresh ginger. I added a knob of butter then stirred until all the chicken was coated in the curry. 


The chicken was then placed in a baking dish and covered with chopped fresh veg, and frozen peas. Next, a tin of coconut milk went over it all, before I lightly stirred it, covered it with foil and placed it in a moderate oven. Then I forgot about it while I dealt with an out of sorts bubby.

When hubby arrived home, I cooked rice and served dinner up. I ate the curry, but instead of rice, I had shredded cabbage and used a smaller bowl. It was good! Curry success at long last :)

Now, onto the daily consumption...

Breaky: as stated above at 8:30am, after a cuppa 2 hours earlier.
Morning tea: 3/4's of a cuppa.
Lunch: 1 small piece of zucchini slice topped with spinach pesto, red capsicum sticks with cottage cheese. Half a cuppa at 12:30.
Afternoon tea: Mexican nuts at 3pm.
Dinner: samples of chicken while cooking, followed by chicken curry served on shredded cabbage at 6pm.

There it is, done and dusted for another day. Until tomorrow, thanks for reading, and I hope this encourages you that no matter what the day throws at you, you can still eat well!
