Another extremely busy day, made better by bacon. Bacon fixes everything, though I'm sure my Dr would disagree. Today was busy with car things, and exhibition things, with some left over grocery shopping thrown in. I shop for specials mainly, so that often means different supermarkets. And if we are heading that direction, we will do shopping across two days instead of one. Some people swear by sticking to a menu and shopping for that. To me, good for you, but I find that both boring and costly as if the ingredients aren't on special-ouch! Mind you, I am at times a boring cook. It isn't always easy to be a whiz in the kitchen every night. Anyway, simple is often best.
Hubby was up at 2am this morning. Yep, you read right- 2am! I know, because bubby wanted a feed then. By morning tea, he deserved something special, so I made him these...
Plain thin pancakes:
In a bowl (and not the one shown above- it's a pain to whisk in with shallow sides), place a generous amount of plain unbleached flour. Add 2 eggs, or one double-yolker like above, a tablespoon of coconut oil (or olive), a pinch of salt and water. Whisk until lump free, adding water to get a cream (not whipped!) consistency.
In a non stick pan on medium heat (may need olive oil spray too), add enough batter to cover most of the base. Cook until batter changes colour. The plain flour doesn't bubble like self raising does. Flip, cook until browned. Serve with any sweet or savoury topping you like. Plain goes with anything. I shall not tell you how much Nutella hubby used. It's nearly all gone now. The next chocolaty spread in our house will be home made and a healthy alternative :)
My non teen sent me a message through WhatsApp today, asking if I can book her car in for a service while she is in Japan. As it's her first roadworthy inspection, she had no idea of what to do. Lucky I did. $37 and less than half an hour later, her car was checked and approved. Now she need not stress the day she gets home. Being a mum never ends. I love that :)
Being busy, tired again and with the weather being horribly humid, my appetite has been a little less than normal. I am, however, making sure I eat nutrient dense food as I do have a little bubby to wake up to during the night, and during the day. I don't want to be too exhausted to care for her, so I am eating very well. The teens had their pizza night as per usual on a Tuesday, hubby had his left over tuna bake (he made it himself- I am impressed!) and I had tuna and salad. See below for lunch and dinner pics...
Lunch: Paleo bread topped with 2 poached eggs and 2 small rashers of bacon. Perfect size and pick me up. I Heart Bacon :)
Dinner: Tuna steak served on a leafy salad with red capsicum, fried bacon and 1/2 a pink lady apple. It was dressed with olive oil and lemon juice. Amazing! Yes, bacon found it's way in there :)
I rang my Dr today. Apparently, the report from my MRI has just been put in her tray. I have to be patient, even though my knee is really hurting. It may be humid, but I have to wear the support bandage I purchased. Getting better often means being uncomfortable first. Being uncomfortable may stretch to surgery, or at least physio. Either way, my mobility is affected, and I have to accept that for this season and apply wisdom. When Magpie swooping season is over, I'm on my bike- I know I'm allowed to do that at least. I am trying to keep that in mind with my diet. Sure, food is comforting, but that comfort shouldn't be abused. I enjoy eating. I also enjoy my health. That's where the balance lies.
My clothes are getting looser. Tomorrow is weigh in day! That will reveal the truth. I hope the scales are kind :) I will also do a measurement and compare it with the last one I did many posts ago. Should be interesting!
Now, for food consumed today...
Breaky: soaked oats, chia seeds (same as yesterday) and a big cuppa at 6:30am.
Morning tea: 1 piece of paleo bread at 9am.
Lunch: Paleo bread with poached eggs and bacon and a large cuppa at 12:30.
Early dinner: Tuna steak salad (above) at 4pm.
Supper: decaff with milk at 6pm.
