left over curry creations

I somehow survived another day of a snuffly, clingy little bubby who woke both me and hubby up last night a few times. I surrendered and let her sleep for an hour on my chest before sneaking her back into bed, where she tossed and tuned for an hour before waking at 2am-ish for a feed. I feel miserable when I have a cold and can't sleep well, so I feel for my little one. Though as the one doing the caring, days are quite eternal when a little one is unwell. Yet- I ate very well again :) Follow my photo diary to see how my day went...


The day began once again with a steamy coffee and this: Paleo slice topped with pesto, some avocado and cheese before being grilled.


After breaky, I made lunch ahead of time to make sure I had nourishing food. This stack is a square of zucchini slice topped with beetroot dip and 15gms of Havarti cheese. 


Next, I made hubby some wraps for today and tomorrow. Layers of pesto, ham, cheese and lettuce leaves make a simple, tasty wrap.


Lastly, before hubby left, I made myself a simple morning tea: 15gms of Havarti cheese and several walnuts.

As the day progressed, I was so glad I had food on hand! I doubt I would have eaten if nothing was made- bubby was that unsettled. I did manage to take her out for a brief trip to the local shops at Kingy. I needed a few extra groceries (lot's of healthy appetites here!), and to get myself a knee brace. I found this one below...

This knee support won both on price, look and because it isn't bulky. It's my new best friend. I wore it today and it really, really helped :)

In the stress of an unsettled bubby, I read this today...

"Mommas, you are so important in the life of your children, please slow down to grasp the moment and hold it as tight as you can before it flies away. And when it flies away you cannot get it back, you can only briefly hold the memory in your heart.So live your life but live it well and prioritize the important. Your life and your child's life is just a vapor held in the hand of Almighty God. Hold them tight and breathe them in. Your children are your treasures given by Him."

I needed to read that. Thank you, A Wise Woman Builds Her Home. And so I did what was suggested. When bubby just wanted to cuddle her mumma, I lay down and let her soothe herself to the gentle rise and fall of my chest. She really is so precious. Red, tired eyes and awkward sleep deprived adult conversations aside, I wouldn't swap these moments for a zillion dollars. 

I didn't stress over getting dinner ready. The clothes can be washed tomorrow. By the time hubby go home, I had started dinner, thanks to my teen, the one on loan from Germany. She watched bub for a little bit so I could start preparations, and hubby cuddled his little treasure so I could finish the grown up peoples food. And all I can say about that is I LOVE LEFTOVERS! My goodness, dinner made easy. 


Throw a few spoons of leftover curry and veg on some puff pastry...


Then seal, and place on a greased tray. No prizes for amazing, precision folds. It all tastes the same. Just make sure it is sealed properly. Cover with a little milk and bake at 220 degrees until golden and risen. 



The leftover cooked rice was turned into a simple rice patty. Here is a batch frying in some olive oil. When using olive oil to fry- don't exceed medium heat. 


Some cooked rice, mashed pumpkin, grated cheese, an egg, some seasoning and a sprinkle of coconut flour is all it takes to make simply delish veggie patties. 



I didn't eat a pastry. I wanted to, but I am pretty darned determined to not eat my feelings with a sore knee. I need to moderate my intake to suit my energy output. To the left over curry, I had this one patty, plus 1.5 more, thanks to my teen :) 

Well, no need for me to go one again about today's consumption. With the exception of a mango/ berry smoothy at 3pm (just fruit and a little water) made by my German teen, I have documented everything. Oops, and a small decaff while the photo's were uploading.
