What a stunning way to start the day! Up early for the sunrise :)
This post has taken the entire day to write! If it sounds disjointed, that is why. This part was written this evening, as I am still trying to get family dinner cooked after strapping my hurting knee. I aim to let nothing stop me moving forward.
I hit the ground running this morning. Bubby wet her bed and splattered her mumma with breaky. I did 2 loads of washing, took 2 loads off the line, fed her again, put her to bed for a brief nap, changed her, all while doing the dishes and trying to make paleo bread, with cabbage this time. Somewhere in there I managed a cuppa- which I drank cold, and a breaky smoothy from the chia seeds and cinnamon I had soaked last night. That was all before my doctor's appointment at 11:20am.
My breaky: soaked chia seeds with cinnamon, a tablespoon of yoghurt, protein powder, cocoa powder and water. No sweetener.
I was mildly nervous about the doctor visit. Now that I have an MRI to book, I'm nervous some more. But if it is a bad tear and I need surgery, then my life won't be over. It will be a challenge, however, it won't be impossible. Hope for the best and prepare for the worst. I am actually more calm than nervous. Not over the moon happy, but surprisingly ok. It may not be anything serious at all, or may just need some physio and TLC. Anyway, it's a great opportunity for others to step up. As I type, my teen is peeling spuds for dinner. Just that is a huge help, and more than she was prepared to do a few weeks ago. Hubby received last minute news this arvo that a report was due tomorrow, and bubby has been completely not herself today, very unsettled and unsure of what she wants. Challenging day! Challenges aren't necessarily bad though. Challenges can help us grow. Seriously, who honestly wants to remain the same forever? Not me! I want to constantly grow, heal and learn.
On to today's cooking, cabbage paleo bread. I ran out of zucchini's- used them all yesterday for the zucchini slice. I figured cabbage would work well too. I also substituted some ingredients I didn't have and omitted others, like ham. Didn't feel like adding it this time.
So I shredded what turned out to be around 2 cups of cabbage. I left that on the breadboard while I added the dry ingredients: 3/4's a cup of coconut flour, 1.5 cups almond meal, salt, 1/2 teaspoon bi-carb, and some chives and as much little bits of parsley I could scavenge off my herb wall, then mixed it all together. I put 5 eggs with 1.5 teaspoons of apple cider vinegar in the magic bullet while I added the shredded cabbage, several chopped green olives and 1/2 cup grated cheddar to my dry mix- I had no parmesan left either. Considering that the original recipe called for 3/4 cup of zucchini, and I had 2 cups of cabbage, and coconut flour absorbs so much liquid, when I attempted to mix it all together, even when transferring to a larger bowl, I had a very dry mix. I pressed it into a well greased tin that I also had lined, topped with pepitas and baked for 35 minutes at 170 degrees. I found I needed to cover it and cook for another 15 minutes at a slightly cooler temp. It rose and felt firm to touch, so I removed it from the oven and let it cool slightly. When I removed it from the tin, pepitas fell everywhere. The mix was too dry to let them all stick.
However, the bread turned out beautifully. I cut it carefully into 11 slices, and promptly ate one before leaving for the doctors. It was dry, but tasted great
Trying to cook, even a simple dinner like bacon potato bake, was a long, drawn out affair when your knee is screaming in pain and your bubby isn't settled and just wants hugs. Dinner did eventually get done, so no one starves tonight. between cooking, I went outside with bubby and looked around the garden, something we both enjoy.
I discovered this little spider hiding in it's palm leaf nest. I can't wait to introduce a curious bubby to the wonders of nature, great and small. I still love making discoveries like this- gardens that are healthy house all kind of creatures, and I'm thrilled when I find them. I will teach bubby to look with her eyes and appreciate nature.
As the day has been rather hectic, I can't remember exactly when I ate, but I can tell you exactly what I did consume...
Breaky: cold cuppa and chia smoothy.
Morning tea 1: 3 small pieces of cheese, 1/2 a piece of zucchini slice.
Morning tea 2: piece of paleo bread and stray pepitas. Coffee- very hot this time.
Late lunch/ early dinner: 75 grams lambs fry with small piece bacon.
Supper: yoghurt and 2 protein balls. Half a weak decaff.
