Day 10, Father's Day

It's my hubby's 1st Father's Day with his own little bubby girl, but he is already an amazing step dad to my teen and non teen. He patiently helped my eldest get her licence a few years back, and listens/ talks for hours with my teen. He wins the award for the world's most patient man. Thing is, he genuinely enjoys their company. 

This morning, I woke up in severe agony. He made me scrambled eggs on toast, and a cuppa, and helped with bubby, gave me cuddles and tried to ease my pain.

Though the lack of space here gets to me far too often, he refuses to let it stop him. Yesterday, he was sawing, sanding and drilling out the back making a display wall for his upcoming exhibition. It was almost half the size of our courtyard and wouldn't have fit width wise, yet he managed to carry it through to the garage when done. And despite being so busy, he always finds time for his girls- me included.

He is an incredible artist, a Mr Fixit, loves hugs, has a great outlook on life, loves to laugh, and just adores me. I shall keep him til we're both old'n'mouldy. 

When my pain relief kicked in this morn, I made hubby 2nd breaky at 9. It was a fave omlette with red onion, green apple, bacon and red capsicum. The recipe is as follows...


Chop above mentioned veg and saute in butter and a little oil until browned. Add salt/ pepper and a bit of curry spice.


Lightly beat 2 eggs with 1/2 cup of cream and 1 tablespoon of  flour. Pour over veg. Cover with a generous amount of cheese. I used parmesan. Cook until bubbles form, then place under a grill until golden.



Serve plain or with a garnish. This morning I used chopped cherry tomatoes and added a splash of balsamic and some cracked black pepper.


My non teen came over today and made this amazing salad, peach and fried haloumi. I suggested adding the nuts for some crunch. It was dressed with a lemon juice and olive oil mix. Seriously delish. 



These babies are my next few days of breaky; a layer of oats and then almond meal, topped with cinnamon, then covered in milk. Topped again with chopped fresh strawberries and a few almonds. Can't wait for breaky! 

Today's eating went like this...

Breaky: 2 scrambled eggs and cheese on wholemeal toast, no butter, coffee, at 6am.
Morning tea: small serve of hubby's omlette. 1/2 a green apple at 9am.
Lunch: Peach and haloumi salad and a cuppa at 1pm.
Dinner: 1 and a half wedges of fresh damper with rice malt syrup at 5pm.
