Day 7 and a sick bubby

To say today was challenging is a huge understatement. After a left field blow from one of the teens yesterday, I was feeling quite a bit unsettled. You think I'd be used to shocks from teens, but strangely, they can still hurl a curve ball that knocks me off balance. 

As we know, little Arabelle wasn't herself yesterday. Today, she took that to hyper mode. Nothing at all seemed to work for her. She is one unwell little girl. Needles, theme parks, colds going around...anything could be responsible. We shall find out tomorrow- or tonight if her symptoms don't improve.

My eating today was all over the shop. I am very glad I had left over bread and threatened, oops, excuse me, politely requested no one touch it. It made eating and staying awake so helpful today- a quick, healthy carb fix.

My diet went something like this, though I can't remember every caffeine fix...

Breaky: a thick slice of homemade bread (no topping) and a big milky coffee at 6:30am.
Morning tea: Medium banana at 10am.
Lunch: 2 pieces of same bread (no topping) with a kangaroo rissole at 11am.
Afternoon tea: another banana at 4pm.
Dinner: 1 small chicken skewer at 5pm. 
Late dinner: the rest of my evening meal, which is chicken stock and veg soup at 6:30pm.

A lot can happen between paragraphs! Not only did I burn my tongue inhaling far too hot soup, but now I also have an unsettled bubby on my lap. Bed time isn't working for her tonight. This shall be fun to finish. So lets try anyway, tonight's dinner for everyone else, the dinner I honestly dinner feel like making but did as I said I would yesterday.

Chicken skewers with veg on rice...


In a pot, put in a  few centimeters of rice and cover with cold water around a centimeter or two higher than the level of rice. Turn heat on high and stir rice until water is boiling. Place lid on rice, turn off heat and prepare skewers.


I used chicken thigh fillets for this recipe, approx 5. Cut thighs into 3 long strips. Skewer 2 strips per stick. Cover with a generous splash of soy sauce and a large spoon of rice malt syrup. Place on a greased tray (I used olive oil) and grill. Turn after 5 minutes. Second side should only need 3-4 mins.

I then sliced one large zucchini, 1/3 head of broccoli and half an onion and sauteed them in olive oil and butter. when slightly browned, add around a 1/4 cup of chicken stock. Season with salt and pepper. 


For some reason, this picture flipped itself, but I am at this stage, waaaaay too tired to care! Serves 4. Enjoy :)
