Day 4- Seaworld and a tortilla stack


Above is the face of wonder. My sweet little girl experienced her first ever theme park today. I'd say by the effort it took me to get her to sleep tonight, she had taken a lot in and worn her little self out. Must be hard being pushed in a pram and carried all day! Still, there was a lot of stimulation for a growing little mind. I'm also thrilled- she appears to love the water and sea life as much as her mumma :) Although she wasn't too keen on tonight's bath. Too much water for one day I'm sure.

I must say that the net is super slow tonight. I nearly fell asleep in the chair waiting for the pictures to upload. The only thing keeping me awake is the throb of my upper lip. After sporting a fabulous mo the average teenage boy would be proud of (yay- thanks ethnic genes!), I decided to wax at long, long last. I realised that I had been a bit neglectful of certain things other than my diet, and now that spring is here, I perhaps should consider a bit more 'detailing'. The weather today was amazing and the realisation hit that what has been hidden all winter is about to be exposed to the world. No more hiding. It's only getting hotter. Groan. 

Now onto foody things. Hubby is sweet. He brought me breaky in bed. It was so, so good. He did accidentally give me sugar free maple syrup. Thankfully, not a lot went on my breakfast. I reminded him that the rice malt syrup was actually next to the maple syrup for next time. But I still ate what he made. His heart was in the right place and it wasn't a big drama. I won't bore you with my loathing of artificial sweeteners. Lets just say, I was once addicted. They are not healthy. At all!

Tonight's dinner wasn't hard, and was all I could come up with after such a big day. Though I have indeed already eaten said dinner, I am still ravenous, but I'm actually too tired to eat. That would take too much effort. We walked, walked and then walked some more today. I'm tired just typing that. Instead of raiding the fridge, I shall move onto today's meals.

So, the food consumed today was...

Breaky: 2 pieces of wholemeal french toast with a small amount of sugar free maple syrup. Large latte at 7am, followed by half a 2 egg omelette with mushrooms.
Lunch: 3/4's of a chicken caesar baguette (pictured below). Water and a weak cuppa at 12 noon.
Afternoon tea: several almonds. Water at 2:45.
Dinner: Small serve of tortilla stack, mince and salad at 6pm. Recipe below.


Lunch was so good, but so big. Hubby helped me eat it. Thankfully, it had nothing sugary about it, and the bread was very dense.


 Tortilla stack recipe...

Mix equal portions of arrowroot and polenta with 1 egg, some water and seasoning. Whisk to form a fairly thin batter. Adjust with more water/ arrowroot as needed. Spray a non stick pan with a little olive oil. On medium heat, cook for approx a minute per side. Should flip easily. Put on a plate when done.


In the same pan, place 500gms mince and 1/2 chopped brown onion. Cook til mince is browned and onion transparent. Season, add 1 tin of plain, chopped tomatoes. Stir, then cook 'til liquid reduces slightly.


Spray a small, springform cake tin with olive oil. Place a little bit of the mince mixture on the bottom. Top with a tortilla. Place half the mince on top. Cover with a layer of cheese. Cover with the next tortilla.


Repeat last step but omit the cheese, then cover the top layer with 1/2 - 3/4's a cup of sour cream. Sprinkle generously with grated tasty and parmesan cheese.


Bake in a hot oven for approx 20-30 mins, or until cheese has melted and slightly golden.


Cut into quarters. Can be stored in the fridge- tastes great the next day too. Though none of ours lasted that long tonight :)
